Make My Mayonnaise

Why, What, How, When….

Why choose to make my mayonnaise? 3 great reasons:

What’s in it? 6 ingredients:

1 large egg

1 tablespoon (15 ml) fresh lemon juice

1 small clove garlic, pressed

1 200ml extra virgin olive oil & 50ml avocado oil

1/2 tsp live, raw, unpasteurised miso paste

(Optional - 1/2 teaspoon English mustard)

How to make my mayonnaise? Easy…

  • Grab a stick blender, its original mixing container, or a jar that's just wider than the blender head and deep enough to allow all the ingredients to be mixed thoroughly, without spillage.

  • Place the egg, lemon juice, miso paste and (if using) mustard in the bottom of container or jar that just fits the head of your immersion blender. The egg, lemon juice mixture must reach the blades for this to work. If the mixture does not reach the blades, double the recipe before attempting.

  • Add the garlic (if using). Pour the oil mix on top and allow to settle for 15 seconds.

  • Place the head of the immersion blender at the bottom of the container and turn it on high speed. Do not pulse or move the *head.

  • As mayonnaise forms, slowly tilt and lift the head of the immersion blender until all oil is emulsified. Season the mayonnaise to taste. Refrigerate in an airtight container. for up to 2 weeks…..

    …. "Voila" 

    If the mayonnaise is ‘watery’, it hasn’t emulsified, combined properly. allow the mixture to settle and separate, then blending again.

* It’s important that the container or jar you use is just slightly larger than the head of the stick blender. The egg & lemon mixture must be in contact with the blades of the blender prior to turning on, for the recipe to work. The head of the blender must be firmly planted against the bottom of the container until the mayonnaise starts to come together.
