What’s in it?
The Ingredients:
250g pitted dates
100ml hot water
4 just-ripe bananas (yellow skin, no green or brown)
3 eggs, beaten
100ml olive oil
1 tsp vanilla extract
5 level tbsp ground flaxseeds
180g Gluten free flour of choice
1/2 tsp bicarbonate of soda
1 tsp baking powder
100g walnuts, or pecans roughly chopped
(optional) 80g dark 80% - 85%, roughly chopped
pinch of sea salt…..
…..and that’s it.
How to make this Healthy Banana Bread?
Its easy…..
Method:
Get your oven going at 190°C/170°C fan and line a loaf tin with baking paper.
Throw the dates into a bowl with the hot water and let them sit for a few minutes to soften up.
Mash 3 of the bananas in a large bowl and mix in the eggs. Chop the fourth banana into chunks and put it to one side.
Blitz the soaked dates (along with their water), the vanilla extract and olive oil in a blender until smooth, then stir it all into the banana and egg mix.
Tip in the gluten free flour, flaxseeds, bicarbonate of soda, baking powder and a pinch of salt. Give it a gentle stir until it just comes together, don't overdo it.
Fold in the walnuts and chocolate if you're using them, plus the diced banana.
Pour everything into your lined tin and bake for 50 minutes until golden. You'll know it's done when a skewer poked into the middle comes out clean.
Let it cool in the tin for a bit, then tip it out onto a plate or rack before slicing.
Serve it however you fancy, almond nut butter, coconut yoghurt and banana works great, or try it with some seasonal berries, hemp hearts or mixed seeds.
Each slice has 7g fibre and 8g protein. Go for the almond butter, yoghurt and banana combo and you're looking at 11g fibre and 27g protein. With almond butter, blueberries and hemp seeds it's more like 11g fibre and 21g protein.

This bread is an absolute winner, packed with fibre and great any time of day, whether that's at breakfast, dessert, a mid-afternoon treat or a post workout quick energy boost. Most banana bread recipes you come across want you to wait until your bananas are overripe and spotty, but not this one. This one actually asks you to use them while they're still yellow (or even a little bit green), that's because they've got far more resistant starch at that stage.
Warm it up and serve it up with some coconut yoghurt, a spoon or two of your favourite nut butter and a handful of seasonal berries for a great hit of protein and antioxidants.
Makes approximately 10 slices. Should take about 15 mins to prep and allow 50 mins to bake it.
What’s resistant starch?
Resistant starch is great for gut health because it acts like a prebiotic, it passes through to your large intestine where it feeds your good gut bacteria, which helps with digestion, keeps you feeling fuller for longer and helps steady your blood sugar levels.
